Food I love, Story of Faith

Gut Health and Sweet Tooth = Chocolate Chip Cookies!

Eating right does not mean that I have to stop eating things that I love and with Christmas right here I love to bake. Here is a recipe that my son and I love to make and they are so good.

Happy Gut Chocolate Chip Cookies

Course Appetizer, Dessert, Snack
Cuisine Dairy Free, Gluten Free, Healthy, Paleo, Sugar Free, Vegetarian, Whole 30
Total Time 26 minutes
Servings 12

Ingredients

  • 1 egg sub flax egg
  • ¼ cup coconut oil melted
  • 1/3 teaspoon almond milk or sub other nut milk
  • 1 mashed banana
  • 2 tablespoons coconut nectar or sub liquid sweetener of choice
  • 1/3 cup cashew butter or sub other nut butter
  • ½ teaspoon cinnamon
  • 3 tbsp coconut flour
  • 1 cup oat flour
  • ¼ teaspoon baking soda
  • 3 scoops collagen optional
  • 1 scoop protein powder optional
  • 3/4 bar of dark chocolate bar I use Clean Chocolate
  • Pinch of sea salt

Instructions

  1. Preheat oven to 162 degrees c (325 f)
  2. Mix together egg, coconut nectar, coconut oil, almond butter, almond milk*
  3. Stir in coconut flour, baking soda, cinnamon, and some sea salt. Let sit for about 5 minutes to let the coconut flour absorb some of the moisture
  4. Fold in chocolate chunks, leaving some on the side for later
  5. Place parchment paper down on a baking sheet and drop cookie dough blobs using a spoon- making about a 10-12 cookies. Place some more chunks of chocolate on the cookies and sprinkle with sea salt. Place in oven for about 12-15 minutes until golden brown.
  6. Keep an eye on them as coconut flour is a bit tricky to cook with!
  7. *can add more milk if needed after adding flour- coconut flour is a bit trickier to cook with so have a look at the consistency. 1/3 teaspoon was enough for my recipe
  8. **can broil for 1-2 minutes for an added crunch factor
