Eating right does not mean that I have to stop eating things that I love and with Christmas right here I love to bake. Here is a recipe that my son and I love to make and they are so good.

Happy Gut Chocolate Chip Cookies

Ingredients
- 1 egg sub flax egg
- ¼ cup coconut oil melted
- 1/3 teaspoon almond milk or sub other nut milk
- 1 mashed banana
- 2 tablespoons coconut nectar or sub liquid sweetener of choice
- 1/3 cup cashew butter or sub other nut butter
- ½ teaspoon cinnamon
- 3 tbsp coconut flour
- 1 cup oat flour
- ¼ teaspoon baking soda
- 3 scoops collagen optional
- 1 scoop protein powder optional
- 3/4 bar of dark chocolate bar I use Clean Chocolate
- Pinch of sea salt
Instructions
- Preheat oven to 162 degrees c (325 f)
- Mix together egg, coconut nectar, coconut oil, almond butter, almond milk*
- Stir in coconut flour, baking soda, cinnamon, and some sea salt. Let sit for about 5 minutes to let the coconut flour absorb some of the moisture
- Fold in chocolate chunks, leaving some on the side for later
- Place parchment paper down on a baking sheet and drop cookie dough blobs using a spoon- making about a 10-12 cookies. Place some more chunks of chocolate on the cookies and sprinkle with sea salt. Place in oven for about 12-15 minutes until golden brown.
- Keep an eye on them as coconut flour is a bit tricky to cook with!
- *can add more milk if needed after adding flour- coconut flour is a bit trickier to cook with so have a look at the consistency. 1/3 teaspoon was enough for my recipe
- **can broil for 1-2 minutes for an added crunch factor
